Sea Bass Kedgeree – Recipe

So I haven’t posted any proper recipes on my blog before, unless you count the gingerbread syrup I posted at Christmastime last year..
I’ve never been the best cook, but lately me and my boyfriend have been trying out some recipes we’ve found, mixing them up a little bit and honestly the outcomes have been great and I’ve been really proud of our creations.
I wanted to share with you the Sea Bass Kedgeree we made, because it was so simple and tasted amazing. You can eat it hot or cold, so it’s actually ideal for Summer.

What you will need:
Cooked sea bass fillets 
Rice (we used uncle ben’s microwave long grain rice)
4 hard boiled eggs
Onion
Mushroom
2 tbsp Thai red curry paste
100g butter
2 tbsp olive oil
Basil
Oregano

Prepping:
Before you can start with the actual meal, you’ll need to cook the Sea Bass in the oven, then cut it up into small rough pieces.
You will also need to boil four eggs (7 minutes in a pan for a hard yolk) and then shell them. Cut them up into small rough pieces.

Method:
– Add the oil and half the butter in a frying pan and cook until the butter has completely melted. Next add the Thai red curry paste and mix until you start to smell the curry aromas.
– Add in the onion (cut into small pieces) and the mushrooms (cut into whatever size you prefer) and cook until soft.
– In a saucepan cook the rice. If you have used microwave rice like me, then just put it in the pan already cooked. Add in the onion and mushroom mix that you have already cooked and stir in well.
– Once this is all mixed, add in the remaining 50g of butter, egg, sea bass, basil and oregano. Heat through.
– Serve and enjoy!
